Tilth owner looking for nearby space for new restaurant

by | Oct 18, 2010

Our news partners The Seattle Times reports that Maria Hines, Iron Chef winner and owner of Wallingford’s much-lauded Tilth restaurant, is looking for space for a second restaurant. And she’s looking at nearby neighborhoods, including Phinney and Greenwood.

The chef envisions the new place, dubbed Golden Beetle (named for one of the classic components of the spice-blend ras el hanout, and considered an aphrodisiac), as an “upbeat, fast-paced” gastropub with an Eastern Mediterranean focus and a North African accent. “The flavors are going to be big,” she insists. “Hot-spice, earth-spice, salty, crunchy, sweet, sour.” As at Tilth, the menu will be 95-percent certified organic.

Writer Nancy Leson says Hines is also looking at Fremont, Ballard and Wallingford. Any suggestions for Phinney-Greenwood locations for Golden Beetle?
