Starting in April, our own Holy Mountain Taproom at 7009 Greenwood Ave N will be hosting The Cavatelli Project to bring something unique and delicious to the neighborhood. It combines southern low country cuisine with an Italian twist, and all the pasta is fresh and hand made. From Conjure Seattle, who are the brains and skillets behind The Cavatelli Project:
Weโve got something special starting April 11th and 12th at Holy Mountain Phinney Ridge. Weโre bringing our unique take on handmade pasta paired with flavors inspired by the Lowcountry of South Carolina. Weโll be serving up seasonal, Southern inspired ragรนs born from Cooperโs roots on the saltwater marshes of South Carolina and Ryanโs passion for Italian cuisine (and his knack for turning just about anything into a ragรน). Theyโre crafted with love and paired with our favorite pastaโcavatelli!
Why cavatelli? Itโs one of the oldest forms of pasta, made simply with flour, water, and a whole lotta love. Weโre obsessed with the way those grooves and curves hold flavors, especially the soulful tastes of the Lowcountry ragรนs.
