The Cavatelli Project to embark on residency at Holy Mountain Taproom

Starting in April, our own Holy Mountain Taproom at 7009 Greenwood Ave N will be hosting The Cavatelli Project to bring something unique and delicious to the neighborhood. It combines southern low country cuisine with an Italian twist, and all the pasta is fresh and hand made. From Conjure Seattle, who are the brains and skillets behind The Cavatelli Project:

We’ve got something special starting April 11th and 12th at Holy Mountain Phinney Ridge. We’re bringing our unique take on handmade pasta paired with flavors inspired by the Lowcountry of South Carolina. We’ll be serving up seasonal, Southern inspired ragùs born from Cooper’s roots on the saltwater marshes of South Carolina and Ryan’s passion for Italian cuisine (and his knack for turning just about anything into a ragù). They’re crafted with love and paired with our favorite pasta—cavatelli!

Why cavatelli? It’s one of the oldest forms of pasta, made simply with flour, water, and a whole lotta love. We’re obsessed with the way those grooves and curves hold flavors, especially the soulful tastes of the Lowcountry ragùs.
