Preserve and Gather café opening this fall at 85th & 6th

Preserve and Gather café hopes to open this fall in the new building at the northeast corner of NW 85th Street and 6th Avenue NW.

We will be serving skillfully prepared coffee and artisan tea while crafting sweet and savory baked goods grounded in tradition and reminiscent of childhood. Beyond morning offerings, we will bring together pairings of the best cured meats and cheeses the Pacific Northwest has to offer. Topping it all off with the bounty of the seasons saved in the form of preserves, pickles and spreads.

Update July 15: We heard back from the café’s owners, Kayla Blincow and Tess Smedley, and wanted to share some of their background and information.

We are hoping to open later this fall. Our concept for the cafe is focused on espresso/coffee (we’ll be using Conduit Coffee Roasters), tea, baked in house pastries, light fare breakfast and lunch (yogurt, granola, toast and salads). We also plan on serving a few selections of local beer and wine to go with our meat/cheese/pickle/preserve boards. The pickles and preserves will be made in house.
We met working in the food industry and bonded over our love of home canning, baking scones and having a good espresso. Kayla has degrees in Art and Drafting but her work background has always been in coffee, she’s been a barista for the past decade and has always dreamed of having her own cafe. Tess has a degree in Environmental Science but has worked in restaurants and cafes for 10 years. She is passionate about home grown and locally sourced food and finding ways to save and enjoy it throughout the year.
We’ll also be launching a Kickstarter campaign in September to assist in the building out costs. There will be great prizes, a lot of which can be redeemed in the cafe once we’re open. Come and peek in if you’re walking by, we can’t wait to meet everyone!
